Originally valued for their nutritional benefits—especially among sailors—egg whites evolved into one of the most iconic elements in mixology, known for creating a luxurious, silky foam.

Acting as a natural emulsifier, egg whites bind flavors together while softening the sharpness of acidic ingredients like lemon juice—resulting in a smoother, more balanced drink.


To achieve that signature texture, bartenders use a technique called a “dry shake”—shaking ingredients without ice first to build foam, followed by a second shake with ice to chill and refine the drink.
